Ingredients:
1 large can of Las Palmas Green Enchilada sauce (This comes in mild, medium and spicy; I suggest you get medium, to give your dish a little kick.)
1 package of shredded cheese (They sell this at the store already shredded; get the Mexican variety... or, a novel concept, grate your own. Use as little or as much as you want. If you're lactose intolerant, pop some Lactaid and get down to bizness. If you're gonna grate your own, I suggest you use a blend of spicy jack and chedder.)
1 package of corn tortillas (Get the pack that has about 24 in there.)
1 small can of Ortega green chiles (the ones that come diced already)
2 small cans of black sliced olives (Make sure to drain the juice out before use.)
1.5 cups of vegetable oil (preferably Mazola)
Mary Lou sez: What? Okay, so you're thinking, what the hell? Oh, it's alright... you've probably had the red kind. Chilaquiles is a Mexican dish that you can serve in the morning along w/some eggs and refried beans, or for supper. The traditional, red kind look like cut-up red enchiladas. I hate red sauce, whether it be on a burrito, enchilada or the Taco Bell "enchirito." Plain and simple, I think it sucks. This isn't really my recipe per se, but I've borrowed a little from here and there and I think you'll truly love it.

Instructions: Cut up your tortillas into strips or rip them apart w/your hands. I like to do this as it gives it a homestyle appearance; it isn't like I'm on the friggin' Iron Chef or nuthin'. Morimoto, how do you like them apples? In a large skillet, place about 1 cup of oil and allow for it to heat up. Add about half of your tortilla strips into the hot skillet and fry them until desired consistency, preferably a little more on the crispy side. Remove strips and rest them on a bowl lined w/paper towels and allow to drain. Add the remaining oil and tortilla strips to the skillet; remove from heat and drain when done. In another skillet, warm the enchilada sauce. Add the diced Ortega chiles and olives into the sauce. Once you've mixed the sauce up with the ingredients, fold in the tortilla strips. After the strips have been saturated with sauce, add cheese. Serve this up on a plate and voila! Dinner is served! If you're daring, fry up an egg and put it on top. I hate eggs, so I don't do this. |
